That table seems to apply only to tile. And in my experience acrylic tub/shower units are nailed to studs directly and wall coverings are butted up to and over the flange.

I'm not thinking about one of those one-piece units, but three piece in something like Corian or Swanstone.
I am, frankly, concerned about seam failure at caulk points.
Would using backer, as opposed to green/blue rock be a superior way to go?
It would probably be overkill
I'm a firm believer in overkill as it keeps my rep good. Backer is a great substrate for adhering Corian or Swanstone. And will mitigate movement, which helps caulk to not fail.
Why dont you just use backer board and liquid menbrane and just use an acrylic pan and then tile the walls i have not had much sucess with Corian or Swanstone
