Hi,
If there’s no water line or bathroom or kitchen room near by, how can I add a sink in a room and have a new kitchen in an old house. Thank you for your help.

Run water lines and drain to the new location. You'll have to vent the sink as well, AAV or open the wall and run up and out the roof. Expect to run new upgraded electric as well.
Most anything can be done with enough time and money.
So long as you don't want a garbage disposal, you can install a sort of mini sump pump (oversized condensate pump) under the sink (if installing a gravity drain is impractical). For water lines, PEX is very easy to snake in.
Don't forget that you need power as well -- code will require several GFCI outlets, minimum.
Thank you
