Tore out the partition dividing kitchen and dining room. The plan is to continue strip floor into kitchen after removing old softwood subfloor. How have you folks dealt with similar extensions to strip flooring? Please see pics.

Ethos without cutting out some of the other strips to stagger your joints it is not going to look good. A couple of options would be to cut it back to an even line and then run you new strips the other direction. Or cut it back even run the strips the other direction for maybe a foot, then change back to the same direction as the living room.
You could also do variations on the second option, different type of wood, 45 degrees to the living room then back to the same direction, a single strip wide, a herringbone pattern a foot wide then back to the same direction. Just get some paper and sketch out some option and see what you like best.
Toothing in floors isn't that hard, just a little time consuming. Like Mike said, cut back your existing floor boards in a staggered, random pattern. Dig out the waste by running a skilsaw lengthwise up the center of the board, then prying out the pieces.
To install new flooring, first, make sure your widths are exactly the same as the existing. Cut the bottom lip of the groove side off the new floorboard, so it will fit over the tongue on the existing board. A few dabs of construction adhesive will help avoid squeaks later on. Facenail the new boards where you can't blind nail them.
