I’m changing out my old aluminum windows to vinyl impact resistant. Existing windows are 78″ high. Impact windows come at 75″ max. I’ll need to raise the sill up 3″. My house is block with true brick fascade. What’s the best way to do this?

Find that picture and post it here again.
Depending upon whether or not you have a sandstone sill, or brick soldier course.
You might lay up another stone sill on top of what you have, but narrower.
Or, lay a stone sill on top of the solder course.
Or, split the diff with a wood sill-new head pc.
How's the inside going to be affected?-no problem there? casings or drywall returns?

Seems to me that it would make more sense (from an outside appearance standpoint) to drop the head. That could use wood (or plastic) without upsetting the look so much.

Since it's 3" you need to make up.
I'd be tempted to add top/bottom and if you want to make it even-bring in the sides as well. Wrap with complimentary metal.

Is there a process in removing and replacing the windows. Seems quite a span with the 3 seperate windows? Will the opening support itself?

I can't say as I've seen this set up b/4, but there's some structural corners there buried in the metal. Something is holding up the lintel. You'd have to open up the covering either in or out to find out what. Inside, there's a header spanning the opening-most likely straight across with a bulkhead dropped from above to make the angle (or a flat return) back to the header.
Having custom windows made will be less expensive and look nicer. They only charge you for the next size up.
They will be custom. They just can't go 78" high. Ratings.
