Yeah, I'm pretty much on call 24/7/365 for anyone I've ever worked for. They know my phone rings in the house and that I will personally deal with anything that needs it, regardless of the time. In my career I've gotten exactly one call after hours... 5 AM... due to a roof leak caused by a roofer chosen by the owner. It leaked on the owner's bed during the first storm of the year. Pretty much a fire drill like Jeff described above.
The worst I remember is a water heater T/P valve went haywire one Sunday, and it wasn't even anything I had anything to do with ( or anyone else for that matter). It just scared them enough to call me first, being as I was familiar with the house and stuff.
I gladly went and installed a new heater.
Oh, one other job I was building an addition for a couple, on a MemDay W/end someone broke into the HO's business location and stole a bunch of stuff..they pried open a steel door, wrecking it..and he paid me to come weld it shut on a Holiday. I went and BOUGHT the welder, my first MIG..at HD. Took some scrap steel and got er done...and got home for the cookout in time. His insurance paid my very high bill, and bought my welder.
Funny thing was he had a flat tire on one of his trucks ( Roach Coach Bizness) that friday afternoon, he changed the tire in the parking lot and LEFT THE LUG WRENCH in the lot, they used that to pry the man door open on the garage, and ransack the food and cigs and cash. they obviously call me and depending on the job either I shoot out or I call my plumber, who offers 24 hr service , and to me at the daytime rates.
been a coupla years ... but I once found myself in a driving rain storm reflashing that temp flashing I was sure would outlast the predicted storm. Lift a ladder and climb a roof with lightening hitting all around ... great idea!
plus ... the flashing was temp ... as I'd tore a shoulder tendon the day before.
almost got arrested on the way over as I ignored a cop telling me "that way" was closed ... he wouldn't accept I was going "that way" just one block then turning down an alley short cut.
fun night.
btw ... the can light was running like a spring ... right over the sink!

Only work for customers that know where the main shut off is.
When bathrooms and kitchens are involved, I make sure the customer knows where the shutoffs are for the home. I'm always amazed how many don't know!
We rotate 2 men at a time on 24 hour emergency call for 2 weeks per rotation
But we do board-ups so we would be and have been on call anyway for calls like you mention.
edit after reading your 2nd post: We use an answering service for the emergency calls and the answering service in turn calls one of 2 salesmen who also take turns on call
