My house under construction is OSB and Tyvek for main air barrier. Along the exterior I did what I could (working around contractors) to do some additional air sealing along exterior, sealing gaps and cracks including the mudsill.
I was intending on doing the same thing along the interior before insulation or drywall, caulking where I can anything that seems like a path for air. This may be a stupid question (over analyzing), but is there any harm in potentially “over caulking joints” and actually trapping moisture? Maybe an area of the wall on exterior is sealed then sealing same area on interior potentially traps moisture?

Extra caulking will not be a problem. You can caulk around each bay at the framing and sheathing connection. All joints between studs, at the headers over openings. Joints in the top plate. Bottom plate to the floor sheathing.
