I’m replacing the backsplash in our kitchen and have come across an issue with the gap between the drywall where our new backsplash will be and our countertop being too wide. The old backsplash was significantly thicker than our current backsplash, therefore when our new backsplash goes up even with the thinset there will be about a 1/4” gap between the bottom tiles and the back of our countertops. Any ideas on how to remedy this issue?

Put a layer of cement tile backer board over the wall to make up the thickness difference.
You could also consider removing and moving the countertop (depending on the material), or updating the countertop with a new one.
Add 1/4 tile backer board and figure on a way to finish any open end of the splash. Thicker tile trim or matching cabinet pc.? to cap the end of the backer and tile. Schluter and others make metal transitions, end caps etc that might work also.
