Over on the Astronomy site I frequent when I am 2-timing you jamokes, there is always someone looking for sources of quality plywood to make telescope bases out of.
Plus it is great to make drawer boxes.
Applyply has been touted here by quite a few but it seems only available in mass quantities.
The States Ind. website has a consumer products tab, but it is under construction (prolly a lo-bid job)
and Baltic Birch is kinda scarce from what I have found on the webnet.
Any help?

Some HDs (or maybe it's Lowe's) have a multi ply birch plywood. Its not quite as good as Appleply, but I think its better than the shop grade birch ply

we used appleply in CA; When I moved east, they looked at me like I was crazy when I tried to find it in NJ and PA. Now I use 1/2" baltic birch for drawer stock and get it at place in Morristown, NJ, called HB Casterline. they seem to be able to get anything I've asked for so far....except appleply.
In other words, free-market capitalism is the best path to prosperity.
Do they stock the 1/2", or is it special order?
Don't know where you are in upstate, maybe one of these places is close by you?

Don't try to get anything from Atlantic. Those guys don't want to deal with even small cabinet shops.
MDO, and HDO plywoods have very few voids, and should be available.
I recommend calling local lumber yards to see what they can do.
I'm in Idaho, and we are three or four truck hours from any large town. My local yard can get either Baltic Birch, or ApplePly for me in single sheets, if I give them a weeks lead time. They are associated with large yards, in the nearest "large" towns, and several other small yards. The group of them has a truck that makes a one week circuit delivering things between the yards. So, while my local yard may not have what I want, one of the others usually does.
The last sheet of ApplePly I ordered actually came from a yard in Denver, which put it on the truck serving eastern Wyoming, and south eastern Montana, which got it to Billings. The truck to my yard picked it up in Billings, and got it to Salmon, Idaho.
