Vent installation only? or part of renovation deal? If first choice, through roof. Otherwise, through wall

Piffin...vent install only. Punching holes in slate roof bothers me...
Neither way will be easy, which is why we pros get the BIG money, LOL
You won't punch a hole in the slate. You will use a shingle ripper to remove the individual slates in the space the vent will protrude and - better yet, find a roofer to sub this to. You might need a replacement piece or two. cutting slate is easy once you get the hang of iot but it can take a few 'practice' pieces before you get what you want and without someone to show you the technique, it could get expensive to learn on your own.
But you could remove the slates, install the vent, seal things in with bituthene, and get a roofer to sub the final to as a repair.
Or
You could do it thru the wall and learn to do some sheet rock or plaster and paint work. This time of year - that doesn't sound like a bad idea!.

sheet rock & plaster I know. the window header >>> fan envelope bother me. also working w/ the slate as I have never worked w/ slate. but from what u say....the roof is the way to go.
Well, based on my experience, it's the way I would go, but you ain't me and I can't see it, so use your judgement. .
