Remodeling an old home. Converting a closet to 1/2 bath. Is there such a thing as a “ventless” fan that I can use in this bathroom. Conventional fan with duct would be a challenge running the duct to the roof or outside. Does that stay within code?

I'm pretty sure that code requires a true exhaust fan, or an operable window.
I know a 3/4 or a full bath require a fan or a window
I'm not sure if a 1/2 bath does though.Do you look to the government for an entitlement, or to GOD for empowerment. BDW
Probably varies with local code.

There are ductless bath fans. They use a charcoal filter.
They are strictly for order control.
But in a 1/2 bath you don't have a mositure problem.
The 1/4-1/2" charcoal filter would be useless after a few months of use. They don't have the capacity. I used to sell an air filter system with a full 3" of charcoal in it with full replacement every year. Filters are not that cheap for what you get!!
Find a way to vent to the exterior.
I'm a big fan of having either a window or vent in a bathroom, but I agree with the others that posted here. I'm not sure its really necessary in a 1/2 bath.
Done quite a few old homes. First floor over unfinished basement? Fan in wall about 4' off floor, oval duct down, follow joist out. Tyr
