Best practice for insulating stone foundation?

Part of my home was built in the 1800s and moved to its current location in the 1930s. When it was moved, it was set on top of this stone foundation. The previous owners had partially finished the basement but not insulated it at all. They just threw up some Walls out of 2 x 4s and drywall.
I’m wondering what best practices nowadays, with all the new products that there are out there ,to somehow cover the foundation with an insulating material. I’d like to take down the useless walls that are currently there and start better insulating and repairing my home from the ground up.

You may want to engage a local engineer to evaluate the condition of the foundation.
