Since you mentioned it, how high over the stove? And is there is there a minimum horizontal distance from stove to cabinet, or can a cabinet right next to a stove be 18 inches above the counter below? (i am a painter by training so forgive me for the questions)
18" is the minimum allowed. 24" is better to allow for more use of the countertop.

I happen to have the spec sheet handy for a Thermador gas cooktop that I recently installed. 30 inches minimum to a combustible surface over the burners (and that gives a nice amount of headroom for looking into the spaghetti pot) 6 inch minimum from the left side of the cooktop to a cabinet, and 3 inches on the right...don't know why left & right are different. If possible, you would want 6-8 inches on the side, to give room for salt & pepper, spoon rest, etc. And the spec sheet calls for 1-3/4 inches in the back. All those dims are for combustible surfaces, and can be reduced if the walls are covered with tile or metal, but no new numbers are given. Also, it says the headroom can be reduced to 24 inches to non-combustible, whuch would include the bottom of a microwave or vent hood.
