i’m going to replace some collar ties made of lumber in an cathedral ceiling with steel stranded cable. does anyone know of off-the-shelf hardware to make the connection between the cable and the 2x rafters?

Feeney's a good place to check, and I'd also look into a marine supply house--sailboats use a lot of cable hardware.
I believe what you want is a clevis or shackle. Do a Google image search with this search string to see lots of pictures.
