Is there a caulk that will not attract dirt, just stay white? I’ve noticed many fine replacement window installs, but the dirty caulk just takes away from the install.
Why would an installer use wood grained vinyl coated trim rather than just normal coil stock?

Paintable caulk should be painted. Non-paintable caulk will retain its color and resist dirt better than unpainted paintable caulk. But the best choice is painted paintable caulk.
The wood grain coil stock usually is PVC coated, at least around here it is. That coating makes the color more lasting, not fade as fast as regular coil stock.
We used to use pure silicone, color matching the metal. 9 times out of 10 it was white. The silicone would get dirty but not as much as acrylic caulk would. The dirt wiped off much easier as well.

You ever use the Quad (tripolymer) brand caulk ? We've been using it now for about 5 years and it doesn't pick up the dust at all. Sticks like everything too.

I have used quad and I have alot of confidence in it. But wiping it down with your finger to get a smooth joint is a pain. Like you said it sticks to everything, it tears the paper towels I try to clean my finger with. So I stopped using it for windows.
I am not the worlds greatest caulker either. I do a good job, but my hands shake so a clean line is tough sometimes and quad doesn't help that.
