I’m building a roof over my deck, it will be supported by 2 6×6 posts which will be anchored to a 12″ diam 48″ deep pier. The 6x6s will be anchored with a Simpson post base which is secured to the pier with a 5/8″ expanding bolt.
I poured the piers yesterday, plain old generic concrete bags from the local hardware store. How long should I wait before drilling for the expanding bolts? I’m in southwestern Ontario. It’s pretty warm here, the posts get about 50% sun throughout the day.

Why not be on the safe side and use an epoxy anchor system instead of a wedge bolt?
Virtually no chance of the green concrete being spit from the expansion forces of the wedge style anchors.

Frammer is right. today is great! Drills eaiser than 30 days from now and yes use epoxy.

In the future: If you are pouring new concrete, and know it needs anchors in it, cast them in. They will always hold better than a drill in.
You are now faced with the problem that you shouldn't load concrete for about a week to two weeks, while it gets a chance to gain some tensile strength, and shouldn't install the wedge anchors.
