I’m considering concrete as a finished floor in a built in shower. Any advice on how to detail the pan?

Not a lot of options in the pan, Dan. CPE and PVC are the two membrane types or hot mop that baby. Unless you live in the sticks, Building & Saftey won't sign off on anything else.
Install a 2 part shower clamping drain. Do a pre-slope, 1/4" to the foot out of deck mud, and install pan membrane per mnfrgrs instructions. Add your finished floor.
I see a lot of problems with concrete in a shower. Concrete always shrinks and it will be so thin above the pan (about 1-2") that it will probably crack. I think deck mud and tile are the way to go. Easier on your tootsies too.
Still stuck on concrete? Then do the above, but buy a drain extension and poor a full 4" slab above the pan. It will still shrink but maybe with a full 4" and some 2x2 16 ga wire in the slab it won't crack.
