I am wiring a small addition on my own home near Chicago. Conduit required by local permit office. If I position a handy box correctly for 1/2 drywall, it seems like it puts the knockout at the edge of the 2×4 wall, meaning if I run my conduit from the from the crawlspace the conduit, to the box, and then up the wall I will also be at the edge of the bottom and top plates. I guess its ok, but my OCD make me think it would be better if it was farther from the edge…but then I’d need offset connectors and not a straight pull. Whats the best/common practice?

Bend the conduit (box offset). Maybe use a deeper box and plaster ring to help center the conduit in the wall.

Simplest fix is to use a deeper box.
Use a mud ring on the handy box. If you're mounting on a block wall you'll have to chip out a recess behind it but that is standard practice.
Dont use a handy box im not sure the space is even legal. Get a 1900 cu in box with side brackets on in it the use the appropriate ring. We use nail straps to the side of the wood. We dont usually off set unless your going into knock outs other than the one closest to the side
