I have a couple issues and wanted to get opinions on solutions.
1) About 6 trusses are about 1″ too long, (or the setback of the block is not correct). Is this overhang ok? Or should I equalize the overhang on both ends lessening the overhang to about 1/2″. If I leave it, how do I treat the bottom of the plywood sheathing and siding that will be going on later?
2) My interior wall is about 3/4″ lower than my outer walls. The trusses are designed to use that interior wall to decrease the span. I found a couple suggestions and wanted feedback. a) Plane down an additional sill plate “spacer”…it would be a wedge shape because the gap decreases along the length of the wall. b) Add planed down shims then fill the underneath of the current sill plate with dry pack concrete.

My advice:
1. Split the difference on overhang. I don't see your siding detail, but you should be able to deal with 1/2" pad out detail for siding no problem.
2. Pad up the middle pier plate with additional framing material. If you put thickness planed blocking at each truss location, then you don't have to cut an additional continuous wedge shape plate. What a P.I.T.A. that would be. The additional plate material in between trusses is not going to be doing any work for you anyhow .Personally I would string or shoot a laser line from outside walls, measure the difference for each pad at truss layout lines, then glue and staple each specific SPF pad to the bottom of each truss at appropriate location. This way when you're ready to set trusses you can run with it without fooling with fastening/splitting blocks or shims over a wedged plate that may or may not plane out exacty. You'd already be dead nuts.

If only some trusses are too long-then the foundation is out of square (as many are). Hang them over or pull back to correct this. You want square, might as well try to get it now.
You also want level. Is the perimeter foundation good for that and the mid wall too low and varying in height? If so, block the bottom of the trusses as suggested. If the perimeter foundation is too high / low somewhere-figure out what it will take to bring all the trusses to a level plane.
