I’m about to start insalling Owens Corning culture stone on my currently brick-faced fireplace, and up above the fireplace too, which used to be drywall. OC’s instructions say I can use Type N mortar to install the cultured stone directly on top of the brick. Over drywall, they suggest builder’s felt and expanded wire mesh with a scratch coat prior to installing the cultured stone. Any reason I couldn’t just install some concrete backer board instead of the expanded wire mesh and the scratctch coat?

That can work. Make sure the CB is well secured to the framing.
I would go with the concrete backer board, much easier. Adhesive or mortar behind the backer and screw it to the studs. I don't know if taping/mudding the seams is necessary but it certainly won't hurt.
