We are wondering whether there is an easy way/tool to cut away vinyl flooring and subfloor flush to the base of the kitchen cabinets. It seems pointless to remove the cabinets to refinish the 100year old floor. If I remove the cabinet doors there is still an 1 1/2 in. overhang above the plinth. It’s very cool -stripes of pine and cedar alternating.
The only advise I have so far is to get ready with my chisel and hammer.

Janet, you could rent a toe-kick saw which is designed to do just that. You might need a chisel in the corners.
*Janet,That would be the underlayment, not the subfloor. The subfloor is the bottom layer, not the top.Be careful with advice you get when you use that term. We use a recip saw for SUBFLOOR. A toe kick saw is used to go through the underlayment without cutting through the subfloor. Big difference in terminology, and advice on how to handle the job. Toe kick saw is the best choice for your project.James DuHamel
*IMHO recip. saws works just fine to cut underlayment at cab. base. Use a 12" blade and cut JUST THROUGH the underlayment, it won't hurt to score the subfloor lightly. If your concerned about the depth, put an ink mark on the blade parallel to the floor as a reminder. Yes, sometimes at corners or ends you may have to finish with a chisel, but the saw blade goes pretty far.
