I just use a sharp utility knife. If I'm worried about it, I'll put a straight edge up against the fin to keep the cut perfectly straight.

I used a cutter designed for cutting plexiglass. Cheap little tool picked up at a discount place, I think. plastic putty-knife -like handle, curved hook blade.
When you draw it down the plastic along the edge of the jamb, it scrapes out a thin thread of plastic as it cuts. 4 or 5 quick passes and you're through.
For plexi, you make a few passes then snap it at the line.
