We redid our kitchen floor going form crappy sheet vinyl to not-as crappy, but still cheap composite vinyl tile. First time laying the stuff and other than a few minor gaps here and there, it went pretty good.
The one issue is that I have one or two tiles that didn’t get enough adhesive under them and are slightly lifting along the middle. Just a hair…enough to feel under socked feet.
I could pry up the tile and put down a new one, but I’m afraid it wouldn’t be level as there’s already a layer of adhesive underneath it. Plus, I have to deal with prying up the tile…
Anyone know of a tip/trick to get it to stay down? Perhaps a certain glue I could just seep into the joint, wipe up and lay a book on top of it until it sets?

That adhesive is probably not really dry and hard yet...you should still be able to scrape most of it up after you pry the tile up.
I would try pressing it with a warm clothes iron first - Use a piece of aluminum foil between the tile & the iron.
