I am building a home using 8″ SIP’s over scissor trusses for the roof. Wasn’t planning any roof ventilation at all because I assumed it would effectively be a “cold roof”. I am considering using metal roofing, and am now finding info indicating that I should have ventilation to battle the condensation that can form under the metal—what do I do?? I am told that many asphalt shingle companies won’t warrant their products over SIP’s because of the lack of ventilation– that’s why I was planning to use metal in the first place. Any suggestions would be greatly appreciated.

Without looking at your plans I am at a loss as to why you would want to put structural over structural, ie: sips over a truss? Why not just do your roof out of sips? Or why not just use the truss system and blow in cellulose and vent the gable ends?
A true structural insulated panel should be able to stand alone as a roof system and if installed properly should be able to support an asphalt shingle roof without problem.
