My builder says they finish the stone with this exposed metal. These pictures are from a house they already completed. It doesn’t look good to me and I have never seen a house finished like that. He says it is to prevent the stone from crumbling.
Should I be OK with this or is there something wrong here?

Not acceptable...go to any other house around the area that has a stone veneer, take pictures and show them to him... I have no idea what they were doing, but it has nothing to do with the stone "crumbling".... go to http://www.eldoradostone.com/imagine/how-to-install-stone-veneer-over-cement-board/ or any of their other installation videos... I don't have any connection to the company, but have used them many times.. Also...just do a google search for "how to install stone veneer" and you'll find several sites giving you lots of help...
I can see reasons (don't know if they are good ones) for using something like that, but no way should it be installed without something to cover it, if only some sort of plastic trim.

Trust your instinct and realize it's time to find someone else to call "my builder" because this one shouldn't be.
Aside from the metal strip at the bottom the work looks like it was done by the laborer. I'd at lire a profssional mason to do the work.
