I’ve got three new construction, one piece, acrylic showers into which plumbing access holes have to be drilled. …Scares me to death! One mistake and i’m dead. Is there any special hole saw i should invest in so as not to chip/break the acrylic??

Acrylic is plastic, not glass. A vanilla hole saw will work fine if you go slow so as not to overheat it and melt the plastic. Put your worry into not putting the holes in the wrong place.
