Any pointers or things to consider on water, drain, electric, exhaust vent hookup access when installing washer and dryer under a counterop? It seems like access to the hookups would be a challenge with a slab of granite/concrete over them and cabinets built around. Like how do get water off quickly in case of a leak?

Build kneepads into the floor for your poor wife. Also keep a back brace handy. And you are correct, heaven forbid a hose should break while you aren't there to manhandle the beast out of its hole. This is one of those designer ideas thta really suck in real life.
Make an access panel on the wall behind the counter, feed the hose up to that and make that the shutoff, or just make it shutoff valves for the shutoff valve!
