I feel kind of dumb even asking this, but how is this word pronounced?
Does it rhyme with pipe, or does it rhyme with I-pay (might be appropriate)? I’ve seen it with an accent over the e, which makes me wonder about how it is supposed to sound.

Not dumb. I had the same question and looked it up in a dictionary before I called my lumber yard to ask for a quote. I didn't want to sound like a newbie (even though I am one!)
I think I saw the pronunciation in a wood working magazine--like you said ""Ee pay"". Knots web site may have it too.

Thanks. I actually asked at the lumber yard, and they had never heard of it. Welcome to New Mexico, where time stands still.
I'm building a porch in front of my house and the building inspector came for the framing inspection this morning. I asked her (yes, her) if I could put 3/4" IPE decking or T&G instead of the 1-1/8" pine T&G that my plans called for. Her response was "is IPE a kind of composite decking?". I had to tell her what IPE was. She said she's get back to me on that.
The local luberyard here that specializes in speciality woods told me that they have only sold Ipe ONCE! And Ottawa is a city with about 1 million people!
My point is that Ipe doesn't seem that popular here either.
You might ask for "Brazilian Walnut" instead. Ipe is known as that too.
There are a number of national internet suppliers of EE - PAY if you can't get it locally. Really nice stuff.

You missed one more possible pronunciation: eeep. I heard that one from a homeowner, and I thought she'd seen a mouse or something.
I've most often heard it pronounced eepay. But I'll bet it is some European-language transliteration of some forest-tribe word anyhow, and who knows how it should be pronounced.
