I have an EIFS system on the house – no problems with water infiltration but we are going to replace it with wood siding for reasons of preference. Does anybody have any tips on the removal of the EIFS siding.

Open up a hole in the middle of the wall, and use a flat shovel to peel the insulation off in sheets. I've seen it come off in small pieces, and seen it come off in 2x8 to 4x8 sheets- depends on how much water got behind it. You'll just have to pull (or drive in) the nails, then.
