ought to cover work hours, dress/appearance (if that's important to you), over time, expectations/requirements (workmanship standards) to fulfil the position, tools they supply, conduct on the job, annual review process, maybe termination process. Your employee may have a few suggestions as well (not that they'll be in the best interest of profit, though).
Run it by your attorney prior to implementing it. Legal needs to ensure that you are in compliance with already established labour laws and ensuring it has teeth.
