How easy or difficult is it to do a tight mitered edge on an outside corner with horizontal fiber cement siding? I know the alternate is to use a corner trim board. I just envision a mitered corner to be more aesthetic.

I wouldn't recommend it. Frankly, I wouldn't recommend a mitered corner with any material.
A mitered corner cut in FC is a little harder to achieve than wood due to its composition. The 45 cuts might have a tendency to chip out on you.
Given that FC has minimal shrink/expand issues compared to wood, a mitered corner might work, but I still think it would open up over time due to the impact of the weather. FC corners would also be very susceptible to chipping.
There are PVC trim products that look pretty close to a mitered corner.

It would be easier to steal the original copy of the Constitution from the National Archive.
Thin edges and sharp corners are difficult to cut and maintain with FC.

I did a project last winter with 8' Hardiplank siding. We were able to weave the corners (much like you do with cedar shingles) to acheive the same look as a mitered corner. I was reluctant at first, however the finished product looked great.

My original clapboards from the 1890s have woven corners with metal corner flashing about 1" wide on each side of the corner. After over 100 years the corners are still in good shape.
I use metal corners on my cedar shingle corners as well.
