Sorry, I couldn't resist a little joke on that first reply. Are you looking for wood species, trim details, what? I'm guessing that all the exterior walls will be log on the inside, but I'm not sure if that's what you mean.
I think that natural stone often goes well with log houses- it can be rustic but crisp at the same time.
One thing to watch out for is overwhelming rusticity. If you put in a bunch of twigwork stair railing and knotty pine paneling, it makes me think "hunting lodge," which is not something I would want to live in. To each his own, of course.
If you give us more information about this place (how big, vacation home or full time, any particular style of log home, where, etc.) you'll get more suggestions.zak

I have irriatable Vowel syndrome.
Ok, now thats outta the way...if you have an OLD log home..with attenuant SPACES betwix the logs..you need to consider a few things...wires/outlets..where and how.
Then the chinking or mud. I REMOVED all of the rocks and mud, and installed 2'' thick Polyiso foam board and also 2" pink dow..everything is glued in with squirt foam..then a layer of expanded metal lath over it...covered with Structo-lite plaster on the inside...I have not yet gotten to all the outside cavities yet, but I will eventually.
I/we WANT the logs exposed and I have spent countless hours with a slew of angle grinders and wire brushes, Lancelots, and sanding discs..then I sprayed it all with Deft Lacquer.
Yeah, I am nuts.
