Howdy, I’m new here, I have been putting my time in finishing the insides of a new pole barn/shop/garage. I am using OSB to finish the walls. This building should be heated in the immediate future. Any suggestions on what to use to fill in the joints? Will drywall compound
work loose, if I didn’t heat the building one winter? That seems the easiest to finish and prep before I paint.

As a first time poster Welcome to Breaktime.
In the situation you mention I'd trust a caulk instead of drywall paste.
And a point to remember is not to use a latex primer on that OSB as it will begin to swell and lift the osb glue impregnated woodchips. An oil base like a Kilz type product is better.

Why do you want to fill in the joints? Any panel product properly installed should yield minimal joints.
IMHO, a joint in a garage/shop is a good thing.

IMHO if you wanted it perfect, it should have been rocked or been done in metal.
If you don't want to see the seams, put battens over them. No more seams, and it will never crack.
You are now familiar with the carpenter and the box theory. Which states: Tell three carpenters to build a box, all the same size, it will be built three different ways, but it will be the right size and shape you asked for.
I would do the battens myself.

OSB really bad choice here. A barn implies farm stuff = moisture inside. So OSB will swell and move. absolute no to drywall compouind for that. Use cualk or battens. Oil based paint to keep that moisutere from soaking into the osb so much. About five or ten coats oughta do it.
