Yes, read Fine Homebuilding. More seriously I recommend looking at other peoples' houses. Mostly you'll find what you don't want to do there. Most book stores and big box stores have books on interior trim carpentry.

What style of house do you have? What style of house do you like/want to have?
If you have any Home Depot or Lowes around you, and who doesn't, they have a nice selection of books on trim work that you can peruse, after all that's why their there!

Go to Amazon, look for the author Brent Hull, of Hull Historical. Not light reading, but if it's trim and in this country, its in there. With about 1000% more info than you think you want at the moment, but education is a good thing. :-)

Forget the magazines, forget the books.
Start cruising showhomes and open houses.
You will see how to blend trim and layouts that work.
When you find something you like go back with a digital camera.
Find out which company supplied the trim and who installed it.

You've gotten some really great suggestions so far, but I'd add that you should spend a few minutes learning about basic architectural styles.
You can hit the bookstore or the library. There are pleny of books about architectural details. Then when you see trim you like, you have a better idea of what you are looking at, as well as having ideas you may not see in newer homes.
In the house I live in, my better half and I have deliberately changed styles in different rooms to add some interest, but a lot of people don't like that.
