You didn't like the other suggestions, from calvin and oldhand? I never had any problem with contact cement, after carefully sizing the laminate beforehand. Care must be taken, if you screw up you ate it. As I said, never a problem for me. Fast and simple, no clamping. Recently saw some of my old work from 30 yrs ago in Denver.
If I were to use yellow glue, I'd do the old trick of using heat to accelerate the bond. I'm sure there's an old Taunton article on the process.

dumb idea - replace the sheetrock with plywood, or at least mdf, for the backsplash area, then contact cement.
I'd skip the whole thing and install tile. Probably faster, given the complications, especially if the cabs are already in place.

I've attatched p lam to d wall many times and seen it done lots more.
I wrecked some in a kitchen remo a while back that was from 1978 and it was still doing the job as in day one, just bad ugly.
It cleans easier than tile or other options though it needs a little more thought as a design feature.
