Hi – Does anyone know if anyone makes hardware for bifold-style garage doors (16′ wide)? I don’t have room for barn door style, and the overhead I have impinges on the headroom in my shop too much.

How about sliding doors?
You might consider a commercial roll-up door. Some of them roll up on the outside face of the building. If you don't like the usual sheet-metal housing, you could build a cover for it that matches the rest of the building.
Out here is the farm country they use these type of doors up to 35 or so feet wide and 24 feet high. Some manual some mechanized. They work well and also give a bit of an overhang in poor weather. There are several suppliers but most local building suppliers handle. Also Morton buildings. Good luck on your project. dan
