I have three 10′ x 12′ wood overhead garage doors which have many coats of paint, and are peeling and cracking. The surface of the plywood panels are badly deteriorated, and they just aren’t worth the time and effort to strip and repaint them every year, and I can’t justify the cost of replacements at this time. Is it possible to skin these doors with a metal skin? How would one deal with the recessed panels, so the metal wouldn’t bend if pushed against? And how to finish the edges so they look good, seal properly, and don’t cut your hands? Anybody done this?? Any thoughts? Thanks in advance.

Can't give you advise about steel, except to caution that your door springs and hardware are probably not designed for the added weight.
What about making a router jig to rout out the integral [I assume] quarter round piece on the inside of the doors, remove the panels and replace them with MDO plywood; then, securie them in place with a new piece of quarter round. I did this with a door I had once. I needed to replace only one panel, and I cut the quarter round profile off the rails and stiles with repeated passes of my utility knife. It worked like a charm.
