I plan on installing a tile countertop on euro style cabinets (i.e. no face frames). I’ve installed 3/4″ ply and 1/2′ wonderboard, hence the edge thickness of the countertop will be about 1.5″ thick once the tile is installed. Since this is a euro cabinets, I can not allow the tile to go beyond the bottom edge of the plywood. Is 1.5″ thick enough, or would it be better to build this up with another 3/4″, for a total of 2.25″?

The reason there have not been any replies is that they have not read your post or are unfamiliar with what you are trying to accomplish.
The 1.5" sounds plenty thick to me but I am not a tile setter. I would be concerned about your bullnose clearing the drawers underneath. Add the 1.5" to the inside edge of your counter edge material then add the tile thickness plus 1/8" for set and make sure your drawers clear and you should be ok.

i think you are putting the cart before the horse tark. the first thing you need to do is decide what tile you want, and determine what the finished height of selected tile in thinset will be. then determine how you want to finish the front, and what height that will be. i have seen nice looking inexpensive tile counters with wood border in the front. you can match cabinets, or contrast depending on taste. or you can go with a tile border, either way once you decide what you want and measure that will tell you if your base is thick enough. since you posted that you have already installed wonderboard i assume you don't want to remove it i would go with a wood border ripped to size, otherwise good luck finding the exact size of tile for a border.
Some of the bullnosed tile that I have seen is up to 4" wide, which would look fine on a cabinet with face frames. Yet a frameless cabinet would either require that I build it up to accommodate or cut the tile to 1.5" thick. I was curious what others have done when setting tile and what is most prelevant. Removing the wonderboard and building up the countertop is not a problem if it means doing it right.

personally, i would build up another 3/4 inch for a wider face tile, i laminate lots of countertops at least 1 3/4 front thickness, i really improves the appearence, and the same would apply the tile

Building up the counter another 3/4" would give it a nice edge. I wanted to know what others have done inthe past and will keep this in mind when shopping for tile.
