My wife and I are building a kitchen island and we are thinking of using granite tile for the top of the island. Our question is: “
“Is there any way to make granite tile smooth enough to roll out dough for pizza or bread? What are your opinions on silicone grout and epoxy grout?”

I've had tile and I don't like the grout for rolling out the dough. Tile is however a great place to save some money. Have you thought of placing a smaller piece of slab granite in a baking area, maybe 2x3 feet and then using tile all around it? You could even get the tile pieces to be the same type of granite, so the colors match.
When I bought our slabs of granite for our kitchen, I was amazed at how much waste granite was sitting around the fabrication shop. One day, there was even a dumpster being filled with small pieces that they couldn't use. Smaller pieces are more difficult for them to sell, so you could get a bargain.

I may be all wet with this idea, but how about no spaces between the "tiles"?--butt them tightly, maybe use a tiny bit of epoxy in the joints to glue all the tiles together. The tiles would all have to be perfectly level though. May not be possible. Of course, if you want a truly monolythic top, but not granite, there's always concrete.

Concrete is nearly the cost of granite, unless you do it yourself which is only a good idea if it is a smaller island because of cracking while it cures.
I didn't know that concrete tops were so expensive! I guess the advantage to concrete is you can pour it in place and not have to wrestle a slab of granite. Also have to make sure the granite is cut exactly right.
There is a lot charged for labor. Plus most of the time they ar e poured off site and then cured on this machine that jiggles it for days while it cures. Then of course labor charged for the color work. But thye are gorgeous when they are done. I too was surprised at the prices people are charging.
