We bought a new built in December and were told to seal the bathroom Grout. We used 511 impregnator grout sealer (twice) along the lines of our grout lines. However, it seems like some parts of the grout are still getting wet. They dry off within 24 hours.
Since my husband and I both have been short on time, we got quotes from two different grout Sealing companies. Upon discussion about the grout still getting wet after we’ve sealed it twice, they both said the exact same thing, which is “purpose of grout Sealing is to protect against staining and make them easier to clean. Grout is supposed to get wet and it is 100% normal for bathroom Grout to get wet and then dry out after. The expectation for the grout to stay dry during a shower after sealing is unrealistic.”
I’m extremely confused now because YouTube and all other online resources say that we need to seal the grout so water does not go in, but these professional sealers say otherwise. Any advice here? Thanks!

The only grout that doesn't change color when wet - sealed or not - is epoxy grout. You don't have or need that. Grout prevents water from penetrating the floor/ wall. Sealer prevents grout staining.
