djk, I don't think there is a standard for wall sconces. It depends on what style fixture you are using. If it's a wall-washer pointing up you want it above eye level. If it's a reading lamp you want it lower. Around 72" seems average.
*Scones are great. I get them at Starbucks all the time. I think the best height is about the height of my mouth.As for sconces, I would buy the fixtures, and figure out what looks good. A lot will depend on your finish wall (wallpaper borders? paneling?)
*It's subjective. I'd say low enough to be able to change bulbs without standing on something, but high enough that nobody's shoulders would ever bump into them.-- J.S.
*We usually put them at 80"
*Depending if its an up or down sconce - we usually go about 6'2" to 6'8" @ center of box. Higher cielings can require higher placement for proportion. Most light works better when coming from higher above.
*I agree, piffin...depends on the light, the shade, the room, etc, but the range is in there.
