I have no experience at all to speak on this topic.
However, I did just have a conversation with an electrical contractor who has done several Wal-Mart jobs. He said that on those jobs change orders were paid at Wal-Mart's discretion and at amounts they chose.
So be sure you know the change order procedures!!

What is your level of experience with commercial work? Is it the total job or just a portion?
Beat it to fit / Paint it to match
Limited........typ. a custom job.
No, this appears to be the whole thing, very custom,
........let me put it this way, Handbags start at $800.00 and go up to $6,000.00....
so it's a Coach or Prada store my wife says....We have done some mall work. Noise is an issue as are attachments to overhead structure. access is a biggie, as they don't seem to like to see you rolling in a pallet of 26' studs on their terrazzo floor.ML

If it is a chain and you end up dealing with them for the $'s, expect hold backs that might float for 90 days.

No, it's really not a chain.....although they have stores in Paris, London, etc.....
One of my first questions with any prospect is about how the project is financed.
Best of luck on the project.A Great Place for Information, Comraderie, and a Sucker Punch.

we had a ball at your wing-ding. Speaking of hand-outs, I still have those dandy work gloves.
Pleasure having you two over.

One thing to be aware of are the malls requirements for construction. A big one is usually the entry from the mall, like not beng able to put any loads/ connections on the mall's overhead structure (some cantileving may be involved for soffits/etc.).
Working hours/ noise are also usually restricted.
Also good to know if any owner rep/ inspector are involved.
I miss the days of working in malls, Cinnabuns in the morning and all that. ; ^ )

Well, as with any job, don't be affraid to ask for what you want (or slightly more) just because it's slightly outside your comfort zone, be energetic/upbeat, do the work, cash the check.
