We’re leveling a one story ranch by shimming around the perimeter foundation and adding new posts. On one side of the house the wall studs rest on the subfloor which rests on the sill plate? What’s the best way to jack up this portion of the house?

It sounds like there are a lot of things wrong. The house is off level, there's no sole plate under this wall, and possibly the wood is too close to grade. Is the sill plate bolted to the footing? It's hard to tell you what to do without seeing it, and only you can decide how much of it you want to correct, and how much you're willing to mess up the walls to do so. There were a couple threads on the old site about putting a new footing under a garage, which could be useful if you're willing to do what it takes to get a big ledger attached to the studs fairly high up on the wall. They even had drawings. I'm assuming the floor joists are parallel to this wall.
