How does plastic behind the sheetrock affect sheathing choice?

I am retrofitting an old Vermont farmhouse. The section I am working on was remodeled in the 1970s and there is plastic behind the sheetrock. The wall is 2×8 filled with fiberglass. Can I put ZIP R6 sheathing on the exterior without worrying about dew points and condensation in the wall? Many thanks!
