I am planning to insulate my unfinished garage, which leads to adding a ceiling.
Garage wall to wall width: 18’4″
4 joists existing, 2x6x20, spacing around 50″.
Furnace and water heater locate at north west corner, flue pipes join at joist height then go to the roof.
See the pictures for details.
Two questions:
1. how do I add more ceiling joists to support drywall and fiberglass rolls? Comply with California code.
2. how do I ceiling the flue pipe corner?

Did you ever do this project? I've recently bought a house in San Jose area with an extremely similar garage and would love to know what worked.
I would duplicate the framing that's there by splitting each 50" space into thirds, roughly 16" centers. Then I would strap across the framing with 1 X 4"s 16" oc.
