Not sure what trim to use on inside of closets, adjoining room has stained oak fluted trim on door/window sides and 5″ base. Seems like a waste to do the same on inside of closets, was thinking of just using 3/4″ flat stock 2 1/2″ wide for base and around doors? Would you just use paint grade and paint white? What do you guys use on the inside of closets when your trimming a house?

I can tell you that on our 1901 four square, they did what you suggest: flat 3/4" stock for the side casing and 1" for the head casing, with a bit of overhang on the inside of the closet.
The baseboard and shoe molding is consistent with the room.
However, I am not positive that these closets are not renovations from the 1920's or so. I'm not certain there were any closets originally.

May come down to who the "customer" is.
If they are going to put fancy italian closet system in, that will want a differnt finish than Closetmaid (or a single rod under a 1x12 on 1x2 cleats for that matter).
How are the closets to be finished? If they are being painted, where does the "paint line" hit on the door trim? If it's goint to be paint from the doorstop back, you could just put up sealed MDF for paint grade trim. Or, you could go with the simple sort of paint-grade wood trim you were thinking of.
The floor finish could matter, too. A tall base might not "do" anything for wall-to-wall carpet (and there's that nagging business about closet systems, too--some hang down assumimg base is no more than 4" tall).
It is and has always been common to use lower grade product in the closet, and to have the new guy learn how to cope and run trim by giving him the closets to work in.
