Insulating home from outside in
I have a 60 year old home that needs new siding and sheathing. It also needs insulation because there is absolutely none between the studs.
When the old siding and the sheathing are removed closed cell spray foam could be applied from outside the house. If I insulate from outside in, I won’t have to tear down the interior plaster walls.
This seems like a great approach to me but I’m not a pro. What do you think? Will this work? Are there any pitfalls?
I plan on Zip System sheathing with a Zip rainscreen and Hardie siding.

The pitfall can be the foam blowing out the plaster as it expands. I'd use blown in cellulose, it'll be cheaper, provide better indoor air quality, it's greener, and not as flammable. Also- has your electrical been updated from knob and tube. In not you better do this before you insulate.
spraying foam into your walls is like filling them with glue. think of the trouble you will have if you ever need to open a wall for repair or remodel.
I was planning on doing the same thing but using rockwool.
The original insulation is really badly installed fiberglass batts from late ‘60s with visqueen over the studs.
Not sure why they did that, specifically since it’s paper faced batts
