What’s the current wisdom on insulating the interior bathroom walls? I’m looking for sound isolation from adjoining rooms, but am worried about moisture retention, as this is a very humid climate.

Moisture retention on interior residential walls? Sounds like a leak somewhere rather than moisture from the bathroom air.
For sound isolation I used rockwool (Roxul brand) on interior walls. Works very well. I also stuffed it under and around the acrylic shower/tub.
Hopefully you have a very good and proper sized exhaust fan for the bathroom that exits outside. Panasonic fans are efficient, quiet and long lasting.
Proper tub/shower enclosure construction for moisture sealing along with good quality bathroom paint will keep the moisture out of the walls.
Thanks for the reply- I've done all the things you mentioned. just worried that if there is a failure of all the waterproffing (especially around the shower/tub enclosure) that the insulation will trap any moisture that gets in the wall cavity.Bill
If water gets in there, it is a problem regardless of if there is insulation or no insulation.
