Hello,
I am going to add rigid foam board to the back side of the kneewall area behind my closets (air is making its way through the insulation). However, how do I best insulate the entry area? I have to cut out a section of drywall to get behind there and I am not sure how to effectively insulate that area as I exit. I appreciate any help you can provide. Thanks.

Foam on the back of your access panel/door.
For the access doors
I have a similar problem, 5 crawl spaces behind knee walls. The entrance doors to the knee walls are strickly amateur, no weatherstripping or insulation. Using a suggestion from the original breaktime, I hung a new door behind the cosmetic door, hinged at the top of the door to swing outward into the crawl space.
This door got fully weatherstripped, all the cracks in the framing got foamed, and the surface of the door got a solid sheet of foam board. I used sliding bolt latches on either side to hold the door closed, which compresses the weather stripping down good and tight when latched.
This has worked very well.
Good luck.
