All they had was 1/2″ Is this thick enough? Will it bow in between the 24″ OC Rafter tails over time?

You could add some blocks and the 1/2 would work
just fine....but a little more info on what kinda of
overhang you are talking about would help.
We've used 3/8" AC exterior ply for soffits around these parts since I've started in the 70's. It's done this way all over the Metro Detroit area.
Most of our soffit systems are 16" or less and they are closed 99.99999% of the time. That means that there will be a continuous support member running parallel behind the plywood on two sides. The blocking at 24" oc isn't necessary except for the joints.
So, to answer your question. yes...as long as the plywood is rated for exterior use. It has to have exterior glue or it will warp and delaminate quickly.

3/8" on 24" centers is common here.
We use to use 3/8" B/C ext. plywood for soffit panel all the time for 16" overhangs all the time. In fact we used a a rabbet gutter board (back side) and just nailed the panel to a chicken ladder or 2x nailed to the wall. The only place we added a cross block between the wall and gutter board was at the panel butt joints. Never had a problem with sagging panels, and never saw one sag in the 20+ years I used that method.
1/2" should be fine.
