I have built a kitchen cabinet out of birch plywood. The face frame and doors are Red Oak. I have applied oil stain to all surfaces. I’m going to finish with an oil based polyurethane. Is it necessary to apply the poly to surfaces that wil not be seen, such as the back and the bottom for the purpose of uniform moisture absorption control?

Generally it's a good idea to apply at least one coat of finish to hidden surfaces, to equalize stresses due to moisture changes.

In the perfect world all surfaces should have the same coating. In the real world of plywood cabinets I wouldn't worry about it.
The doors sould have same number of coats on both sides. Not so important at all for the box surfaces
Kitchen Cabinet Door Rail and Stile Stacked vs 2 Bits
The subject of doors brings up another question. I've got to buy Rail and Stile bits in order to make the doors. I've read articles that recommend the one piece Stacked (not Reversible) bit over the 2 bit sets because it is less expensive. I was considering the MLCS Stacked bit. If I go the 2 Bits route I would buy from Infinity.

I gave up bying MLCS bits.
One of them lost a carbide tip when I turned it on. The piece niched my earlobe going past at a hundred miles per hour or whatever....another ich or so over and it would have been my juggler vien staining my collar red
